Data from an online survey of Tennesseans in 2023 to assess their preferences for nutrient enhanced microgreens. Preferences and values were estimated using a discrete choice experiment where attributes included color, length, species, nutrient enhancement production methods, and price. Perceived risk of different nutrient enhancement production methods were also assessed. A total of 821 people participated in the study.
