NutriImage v1.1 — Japanese Cafeteria Dish Images with Dietitian-Calculated Nutritional Ground Truth

NutriImage is a dataset of 887 images of Japanese cafeteria dishes with per-dish nutritional ground truth (energy, protein, fat, carbohydrate, salt equivalent, and total served weight) calculated by registered dietitians from ingredient-level recipes using the Standard Tables of Food Composition in Japan, Fifth Revised Edition (2000). The dishes were served at the Kyoto University co-op cafeteria and photographed in 2002–2005 as part of the "Health and Nutrition Information" project (health-info.jp). Images are the text-removed versions (cropped and/or white-filled) used in the companion papers (Nutrients 2026, 18(12):2017 and a study under review). Images depict prepared food only; no persons are shown. See the bundled README.md for provenance, file formats, and access conditions. Images are available under restricted access for academic research purposes; request access via this record. Version 1.1 (16 Aug 2026) replaces 51 images in which burned-in text had escaped the text-removal step; see README.md for the list of affected image IDs and details.
