本数据主要用于监测三门青蟹(肉)钙指标的变化情况,用于监管部门加强对三门青蟹养殖经营过程的监管。1.样品来源:本项目抽检的青蟹全部来源于三门县流通环节市场主体经营的青蟹,检测部位是肉。 2.数据检测:青蟹样品经处理并取出蟹肉,经消解后,由电感耦合等离子体质谱仪测定,以钙元素特定质量数定性,采用外标法,以钙元素质谱信号与内标元素质谱信号的强度比与钙元素的浓度成正比进行定量分析。 3.数据判定:钙含量的计算,x=(ρ-ρ0)×v×f/m。试样钙含量,单位为毫克每千克或毫克每升(mg/kg或 mg/L);ρ试样溶液中被测元素质量浓度,单位为毫克每升(mg/L);ρ0试样空白液中被测元素质量浓度,单位为毫克每升(mg/L);V试样消化液定容体积,单位为毫升(ml);f试样稀释倍数;m试样称取质量或移取体积,单位为克或毫升(g或 ml)。计算结果保留三位有效数字。食品中钙含量每1000克大于或等于1200毫克的为高钙食品。 4.数据应用:通过抽检数据分析研判,对通过抽检结果加强该区域水质、土壤的检测以及养殖过程的监管,提升三门青蟹质量水平。

This dataset is primarily intended to monitor changes in the calcium index of Sanmen green crab meat, so as to assist regulatory authorities in strengthening supervision over the breeding and commercial operation of Sanmen green crabs. 1. Sample Source: All crabs sampled in this project are sourced from market entities operating in the circulation sector of Sanmen County, with the tested portion being the crab meat. 2. Data Detection: After processing the crab samples and extracting the crab meat, the samples are digested and then analyzed via Inductively Coupled Plasma Mass Spectrometry (ICP-MS). Qualitative identification is carried out using the specific mass number of calcium, while quantitative analysis adopts the external standard method, where the ratio of the mass spectral signal intensity of calcium to that of the internal standard element is proportional to the concentration of calcium. 3. Data Determination and Judgment: The calcium content is calculated using the following formula: x=(ρ-ρ0)×v×f/m. The calcium content of the test sample is expressed in milligrams per kilogram or milligrams per liter (mg/kg or mg/L): ρ is the mass concentration of the detected element in the sample solution, with the unit of milligrams per liter (mg/L); ρ0 is the mass concentration of the detected element in the sample blank solution, with the unit of milligrams per liter (mg/L); V is the constant volume of the sample digested solution, with the unit of milliliters (ml); f is the dilution factor of the sample; m is the weighed mass or pipetted volume of the sample, with the unit of grams or milliliters (g or ml). The calculation results shall be rounded to three significant figures. Food with a calcium content of greater than or equal to 1200 mg per 1000 grams is classified as high-calcium food. 4. Data Application: Through the analysis and assessment of the sampling inspection data, the detection of water quality and soil in this region and the supervision over the breeding process can be enhanced based on the sampling results, so as to improve the overall quality level of Sanmen green crabs.
