This dataset compiles extraction-yield values for a wide range of fruits used in the modelling of fruit-derived ingredients within a Life Cycle Assessment (LCA) framework. The data were collected through a structured literature review covering 47 scientific sources published between 1987 and 2025. The dataset includes (i) category-level extraction-yield averages, (ii) fruit-specific averages (pre-2015, post-2015, all-time, and WFLDB baseline values), (iii) a long-format dataset containing all individual extraction-yield datapoints linked to their publication year and PaperID, and (iv) the complete list of bibliographic references used.These data support the construction of standardised fruit extraction archetypes for carbon footprint modelling of FCJ, essence, distillate, extract, and infusion processes. The dataset enables transparent traceability and reproducibility of extraction-yield assumptions used in LCI (Life Cycle Inventory) modelling, particularly in industry contexts where fruit-derived ingredients contribute substantially to upstream Scope 3 emissions.This dataset was produced as part of a master’s thesis on the environmental impacts of fruit-derived flavour ingredients and is intended as a reusable resource for researchers, LCA practitioners, and organisations modelling food and beverage supply chains.
