The dynamics of fungal community during the whole solid-state fermentation of Shanxi aged vinegar were determined and analyzed by principal component analysis. The relationship between the dynamics fungal community and environmental physicochemical factors changes during the whole fermentation of vinegar production was initially established in our study, which may facilitate long term technological developments and innovation of the vinegar industry.
