Leuconostoc pseudomesenteroides YT830: A promising lactic acid bacterial starter culture for synbiotic fermented yak milk products as revealed by metabolic and genomic analyses

The study aims to investigate the metabolic capabilities and characteristics of autochthonous lactic acid bacteria derived from NFYM on various oligosaccharides. Furthermore, it aims to elucidate the molecular mechanisms underlying the actions of these strains through genomic analyses and to assess their probiotic properties. The objective of the study is to assess their potential as probiotics for the development of functional fermented yak milk products, specifically synbiotic products that can effectively regulate the health of the intestinal microbiota.
