Propionibacteria are Gram-positive, non-motile, non-sporulating, anaerobic to aerotolerant, mesophilic Actinobacteria belonging to the order Actinomycetales. The genus Propionibacterium comprises cutaneous and dairy species. Dairy species are found in milk and dairy products. Propionibacterium freudenreichii (type strain: CIRM-BIA1) is the most used dairy species and constitutes a key ripening starter in Emmental cheese technology. The ITG P20 strain, alias CIRM-BIA129, was isolated from traditional Emmental cheese, made without added propionibacteria starter, in 1984. It is currently used as an industrial ripening starter owing to its good technological properties (robustness, fast propionic fermentation in chees
