Untargeted metabolomics data of Yanbian cattle longissimus dorsi across four slaughter ages

This dataset contains raw untargeted metabolomics data generated from the longissimus dorsi muscle of 24 Yanbian steers slaughtered at 24, 28, 32, and 36 months of age, with six independent animals per group. Biological samples are identified as 24-1 to 24-6, 28-1 to 28-6, 32-1 to 32-6, and 36-1 to 36-6, where the first number indicates slaughter age in months and the second number identifies the individual animal. Files labeled Positive_Ion and Negative_Ion correspond to positive- and negative-ion ESI acquisition, respectively. The QC files represent pooled quality-control samples prepared from equal aliquots of the biological samples and analyzed in both ionization modes. Data were acquired using a Vanquish UHPLC system coupled to a Q Exactive HF-X high-resolution mass spectrometer. All metabolomic measurements deposited here were newly generated for this study and have not been published previously.
