Data set associated with an experimental research of extraction of bioactive compounds from apple pomace and encapsulation of this material using Supercritical-Assistied Technology

The dataset contains experimental data on sugar removal from apple pomace, extraction of bioactive compounds using different solvents, characterization of the extracts by HPLC, evaluation of antioxidant activity, and their application in coating with a PVP polymer using supercritical-assisted atomization.
