Diffusion MRI for lipids localisation in salmon filets

This data is a 3D MRI broadcast image set. The acquisition parameters were chosen to highlight the protons of lipids compared to those of lean tissues. These 3D images allow us to locate lipids at the millimeter scale. They are mainly located on myoseptes, and at the level of the central ridge. Images resolution is 1*1*1.5 mm. Images description gives fish type and imaging localisation : head side or tail side. Head/Tail side means that the field of view covers the half filet on the head/tail side.
