Supporting metabolomics data for "Beyond the first cup: Untargeted metabolomics reveals metabolite depletion and persistence across multiple coffee brewing cycles"

This dataset supports the manuscript, “Beyond the first cup: Untargeted metabolomics reveals metabolite depletion and persistence across multiple coffee brewing cycles”. It contains untargeted metabolomics data from coffee samples collected across five consecutive brewing cycles, acquired in both positive and negative ion modes. The dataset includes replicate-level feature intensity data for three replicates; median feature intensity data merged across replicates; two-way ANOVA results; differential feature identification tables comparing brewing cycles 2–5 with the first brewing cycle; and raw MS/MS spectra acquired for selected features and authentic standards used to support metabolite identification.
