Taking fresh-cut potatoes as the research object, high-throughput sequencing technology platform was used to investigate the microbial community structure and dynamic pattern of fresh-cut potato samples, and to systematically analyze the dynamic changes of microbial composition and bacterial phases of fresh-cut potato samples throughout the whole process of refrigerated storage.
