Foodborne diseases threaten global health, and ready-to-eat (RTE) meats like Zhenjiang Crystal Pork are prone to microbial contamination, with gaps in full-production microbial studies. This study aimed to analyze microbial communities in its production, identify key control points/sources, and support GHP/HACCP. It selected 36 samples for 16S rRNA gene sequencing .
