Staphylococcus aureus is a major foodborne pathogen capable of withstanding multiple stresses present in food environments. Although the alternative SigH has been reported to show minimal expression under standard culture conditions, its biological relevance remains unclear. Transcriptome analysis reveals gene expression changes after deleting sigH. This study sheds new light on strategies for improving stress and biofilm control in food processing environments.
