A sampling test was conducted on commercially available canned luncheon meats, with the detection item being nitrite content, which is a critical indicator for their food safety, thereby providing factual evidence for the quality analysis and evaluation of canned luncheon meats.
For data collection, finished canned luncheon meat products were sampled, and their nitrite contents were detected.
