The fermented grain samples of fermented process were collected from a liquor distillery (Weifang, Shandong, China) in December 2017. Samples were collected at day 0, 5, 8, 15, 20, 40 and 45 days with three replicates, and stored at -20 ?C for DNA extraction and flavor compounds determination.
