Safety and technological characterization of L. garvieae. L. garvieae IPLA 31405 was isolated among the dominant microbiota of a Spanish raw milk cheese (Casín). It grows well in lactose and produces a bacteriocin active against some food-borne pathogens. IPLA 31405 did neither present haemolysin and gelatinase activity nor produce the biogenic amines tyramine and histamine, but it showed resistance to tetracycline encoded by a tet(M) gene.
