鱼糜制品在加工过程中,常常会加入一些外源添加物来改善其品质,存在一定的质量及食品安全风险隐患,本数据可 以对鱼糜制品使用食品添加剂的情况进行安全性评价,为政府监管、消费者购买提供参考和技术支撑。1.数据采集:采集鱼糜制品抽样地区、抽样场所、样品名称、包装分类等信息; 2.食品添加剂检测:通过对鱼糜制 品各种食品添加剂进行检测获得相关食品添加剂数据结果; 3.数据处理:筛选出鱼糜制品各种食品添加剂问题项检 测结果,用于评估其食用安全性,鱼糜制品某种食品添加剂问题发现率=鱼糜制品中某种食品添加剂检出问题项次数/ 进行食品添加剂监测的鱼糜制品总数;4、数据应用:鱼糜制品各食品添加剂问题项检测结果可以作为食用安全性评 价依据,为监管部门靶向监管提供技术支撑。
