基于规范的食品抽(取)样和实验室检测,并按照标准方法处理原始检测数据,获得食品样本中丙酸及其钠(钙)盐含量数据,通过比对食品安全国家标准,对样品进行合格性评价,判定食品中丙酸含量是否达标。该数据可为食品生产主体在食品生产过程中规范食品添加剂使用行为,提升食品安全水平提供数据信息支撑,并可为监管部门开展食品安全监管及风险交流提供执法证据和科学依据。1.样品检测:依据相关工作规范组织抽样及制样,精确称取均质食品试样(糕点类5.00g,豆制品及液体样品25.00g),按照《食品安全国家标准 食品中丙酸钠、丙酸钙的测定》(GB 5009.120-2016第一法 液相色谱法)进行前处理及上机检测,读取样品浓度C(mg/mL)数据。2.数据处理:根据计算式计算样品中丙酸含量检测结果(g/kg)=(C×V×n×1000)/(m×1000),其中,C(mg/mL)为样品浓度,V(mL)为定容体积,n为稀释倍数,m(g)为取样量。3.合格率计算:依据《食品安全国家标准 食品添加剂使用标准》(GB 2760-2014)对样品进行合格性评价,并计算合格率(%) = (合格样品数量 / 检测样品数量) ×100%。4.数据应用:食品生产主体可根据食品中丙酸及其钠(钙)盐含量检测数据,对照食品安全国家标准,规范生产过程中食品添加剂使用行为,确保出厂产品合格;食品监管部门根据检测数据及合格率统计数据精准开展食品安全监管和风险交流。
Based on standardized food sampling and laboratory testing, along with standard processing of raw test data, the content data of propionic acid and its sodium (calcium) salts in food samples were obtained. By comparing with national food safety standards, the eligibility of the samples was evaluated to determine whether the propionic acid content in the food meets the standards.
This dataset can provide data and information support for food production entities to standardize the use of food additives during food production and improve food safety levels, and can also provide law enforcement evidence and scientific basis for regulatory authorities to carry out food safety supervision and risk communication.
1. Sample Testing: Sampling and sample preparation are organized in accordance with relevant working specifications. Homogeneous food test samples are accurately weighed (5.00g for pastry products, 25.00g for bean products and liquid samples). Pre-treatment and instrumental testing are carried out in accordance with the National Food Safety Standard - Determination of Sodium Propionate and Calcium Propionate in Food (GB 5009.120-2016, First Method: Liquid Chromatography), and the sample concentration C (mg/mL) data is recorded.
2. Data Processing: The test result of propionic acid content in the sample (g/kg) is calculated by the formula: (C×V×n×1000)/(m×1000), where C (mg/mL) is the sample concentration, V (mL) is the constant volume, n is the dilution multiple, and m (g) is the sampling mass.
3. Qualification Rate Calculation: The eligibility of the samples is evaluated in accordance with the National Food Safety Standard - Standard for the Use of Food Additives (GB 2760-2014), and the qualification rate (%) is calculated as: (Number of qualified samples / Number of tested samples) ×100%.
4. Data Application: Food production entities can standardize the use of food additives in the production process according to the test data of propionic acid and its sodium (calcium) salts content in food, and compare with national food safety standards to ensure the qualification of products leaving the factory; food regulatory authorities can carry out targeted food safety supervision and risk communication based on the test data and qualification rate statistics.
