Obesity, a chronic and multifactorial metabolic disorder, has demonstrated an alarming increase in prevalence throughout Mexico, a phenomenon largely attributable to the substantial consumption of ultra-processed food products. Consequently, there is an imperative need to develop more representative and cost-effective animal models that accurately recapitulate the complex dietary patterns implicated in the pathogenesis of obesity. The present study aimed to establish a robust murine obesity model employing outbred CD1 mice exposed to a high-fat, high-sucrose diet (HF-HSD) designed to replicate the dietary consumption patterns characteristic of Mexican ultra-processed foods. Male and female CD1 mice were randomly assigned to receive either a standard chow diet or an HF-HSD (composed of 44% fat and 40% sucrose by caloric content) over a 17-week experimental period. Comprehensive analyses were subsequently conducted, including the evaluation of metabolic and inflammatory biomarkers, quantification of adipose tissue accumulation, and histopathological examination of hepatic tissue.
