Supplementary Data for: Direct EPR-DPPH Protocol for Complex Matrices: Russian Insights into African Consumer Products
收藏资源简介:
This dataset contains the raw, unprocessed Electron Paramagnetic Resonance (EPR) spectral spin values and the complete supplementary calculation data for the comparative antioxidant assessment of six commercially available Russian products: American coffee, green tea, lemon, orange, mandarin, and an energy drink. The data support the validation of a direct, matrix-tolerant EPR-DPPH assay that bypasses the optical interference often encountered in colorimetric assessments of deeply pigmented beverages. Included are the raw double-integral values for the ascorbic acid calibration curve (R² = 0.998), the sample reaction kinetics at 7 minutes, and the final dilution-corrected antioxidant activity values (mmol AAE/L). This data is provided to ensure full transparency, enhance reproducibility, and encourage the application of this direct EPR protocol to other complex food matrices, particularly indigenous African functional foods.
