Mini-roses (Rosa chinensis Jacq.) are sources of nutrients and bioactive compounds in the human diet, however, due to their fragility, emerging technologies have been suggested for microbial decontamination and maintenance of the chemical and sensory characteristics of these matrices. This study evaluated the effect of two cold plasma technologies [dielectric barrier discharge (DBD) and glow discharge (glow)] in chemical composition, color parameters, composition and bioaccessibility of phenolics, antioxidant capacity, volatiles profile and microbiota of fresh mini-roses.
