Data for: Surface occupancy and interfacial contact: mechanistic insights into tea polyphenol-induced oil uptake in cooked rice noodles

Numerical data behind every figure and table of the manuscript and its Supporting Information, with a readme in plain text. experiment/ holds the instrument output and the tabulated measurements, three independent samples per level; md/ holds the per-frame molecular-dynamics analyses, one JSON per analysis; iface_anchor/ holds per-replicate coverage of the oil surface and the umbrella-window contact counts; pmf/ holds the two umbrella-sampling profiles; derived_quantities.csv lists every difference, ratio and interpolation quoted in the text together with the arithmetic that produced it. The readme maps each number displayed in the paper to the file and field it comes from. Figures and source code are not included: the figures are drawn from these files and are printed in the article.
