wheat bacteria were monitored from ear harvest until the first step of fermentation for sourdough development. The ears of four Triticum durum varieties (Duilio, Iride, Saragolla and Simeto) were collected from several fields located within the Palermo province (Sicily, Italy) and microbiologically investigated.
