Green tea leaves were treated with trans-2-hexenal vapor at 0, 10 and 100 ppm for 0, 3, or 6 hours to produce GABA rich tea. According to the previous metabolome study, we noticed that the vapor treatment of green tea leaves with trans-2-hexenal higher than 10 ppm for longer than 3 hours increased the amount of GABA more than 8 times in comparison with control. In this project, we tried to make clear which kind of enzymes were involved in GABA increase focusing on the transcriptome alteration of glutamate dehydrogenase, glutamate synthase, glutamine synthase, GABA transaminase, glutamic acid decarboxylase, succinate semialdehyde dehydrogenase.
