月饼酸价含量安全评价检测数据

酸价（以脂肪计）主要反映食品中油脂的酸败程度，食品中酸价超标会产生哈喇味。食用酸价超标的食品，可能引起肠胃不适等症状。在不少月饼的制作过程中少不了油脂，所以月饼酸价含量需要进行检测评价。本数据主要用于监测天台县流通领域月饼酸价含量指标的情况，通过检测数据，可以判断月饼中酸价含量是否符合食品安全生产标准，避免因月饼酸价含量超标导致的食品安全问题，为监管部门提供监管依据，进一步保障消费者的食品安全。1、样品来源：本项目抽检的月饼全部来源于天台县流通环节市场主体生产销售的月饼。 2、数据检测：样品经前处理后，根据GB 5009.229-2016第二法检测原则，利用电位滴定仪等仪器进行测定，得出数据。3、数据判定：酸价含量的计算，X=(V-V0)×C×56.1/m。X为试样酸价含量，单位为mg/g；V为试样消耗标准滴定溶液体积，单位为mL；V0为相应的空白消耗标准滴定溶液体积，单位为mL；C为标准滴定溶液的实际浓度，单位为mol/L；m为试样称取质量，单位为g。月饼中酸价含量标准要求为≤5mg/g。 4、数据应用：通过抽检数据分析研判，我们可以判断月饼中酸价含量是否符合食品生产标准，避免因酸价含量超标而产生的食品安全问题，为监管提供依据。

Acid value (calculated based on fat) mainly reflects the rancidity degree of oils and fats in food. Excessive acid value in food will produce a rancid taste. Consuming food with overly high acid value may cause symptoms such as gastrointestinal discomfort. Since oils and fats are indispensable in the production of most mooncakes, it is necessary to detect and evaluate the acid value content of mooncakes. This dataset is mainly used to monitor the acid value content indicators of mooncakes in the circulation sector of Tiantai County. Based on the test data, we can judge whether the acid value content of mooncakes meets the food safety production standards, avoid food safety issues caused by excessive acid value in mooncakes, provide regulatory basis for supervision departments, and further protect consumers' food safety.

1. Sample Source: All mooncakes sampled in this project are produced and sold by market entities in the circulation sector of Tiantai County.
2. Data Detection: After pre-treatment, the samples were determined using instruments such as potentiometric titrators according to the second method specified in GB 5009.229-2016, and the test data were obtained.
3. Data Judgment: The calculation formula for acid value content is $X=(V-V_0) imes C imes56.1/m$. Here, $X$ represents the acid value content of the sample, with the unit of mg/g; $V$ represents the volume of standard titration solution consumed by the sample, with the unit of mL; $V_0$ represents the volume of standard titration solution consumed by the corresponding blank test, with the unit of mL; $C$ represents the actual concentration of the standard titration solution, with the unit of mol/L; $m$ represents the mass of the weighed sample, with the unit of g. The standard requirement for acid value content in mooncakes is ≤5 mg/g.
4. Data Application: Through the analysis and evaluation of sampling data, we can determine whether the acid value content of mooncakes meets the food safety production standards, avoid food safety problems caused by excessive acid value, and provide a basis for supervision work.
