In order to explore the viral communities in the solid-state brewing process of traditional Chinese vinegar. Vinegar Pei samples for metagenomic analysis were obtained before turning over vinegar Pei on the 0th, 8th, 12th and 18th day of fer mentation, respectively. The sampling stations were distributed at the trisector (about 15 cm from the wall) of the ceramic vat. Vinegar Pei samples from top to bottom in the ceramic vat were took out and well mixed at every sampling station, and then reduced by coning and quartering repeatedly.There were three biological replicates for each sampling site. Some samples are used for bacterial metagenomic analysis and the other for viral metagenomic analysis.
