Lacticaseibacillus paracasei LK10 is a unique lactic acid bacterium derived from bean soybean fermentation liquor, which promotes the curd of heat-denatured soy protein to form sour tofu. The whole genome of LK10 was sequenced in order to analyze the mechanism of its curd, and it was found that its genome contains 1 chromosome and 3 circular plasmids, which together shape its unique biological characteristics and metabolic functions.
