This dataset supports the manuscript entitled “Fermented taro (poi) enhances intestinal barrier integrity, attenuates inflammatory signaling, and reshapes gut microbial metabolism.” The dataset contains experimental data generated from in vitro cellular assays, fecal fermentation experiments, short-chain fatty acid (SCFA) analysis, and gut microbiome sequencing analyses evaluating the functional effects of fermented taro (poi). The repository includes the following files: adhesion_invasion.csvQuantitative data for pathogen adhesion and invasion assays evaluating the effects of fermented poi samples on intestinal epithelial cell interactions with pathogenic bacteria. inflammatory_genes.csvRelative mRNA expression levels of pro-inflammatory genes measured in intestinal epithelial cells following treatment with poi samples. anti-inflammatory_genes.csvRelative mRNA expression levels of anti-inflammatory cytokine-related genes. tight_junction.csvRelative mRNA expression data of intestinal tight junction-associated genes involved in epithelial barrier integrity. SCFA data filesConcentrations of short-chain fatty acids generated during fecal fermentation experiments, including acetate, propionate, butyrate, and branched-chain fatty acids.
