Brazzein is a sweet-tasting protein originally isolated from the fruit of Pentadiplandra brazzeana, a plant native to Gabon and Cameroon, where its fruits have been traditionally consumed. Brazzein is 500-2000 times sweeter than sucrose, and recombinant brazzein is being considered as a safe alternative to sugar. It has already been approved as a food additive in several countries. This study aimed to evaluate the tolerance and safety of recombinant brazzein consumption by a group of volunteers. Here, we present the results of sequencing the faecal microbiota of volunteers before and after consuming brazzein, compared with volunteers who consumed sucrose.
