Microbial communities are responsible for converting grape must into wine. Grape must community diversity can influence community function as grape must ferments. We tracked the grape must fungal community throughout fermentation in seven industrial fermentation vats and a series of laboratory microcosms. Fermentation vats contained the fungal community normally resident in grape must, while laboratory microcosms contained fungal communities with manipulated species richness. Our goal was to understand how species richness changes with time, and to understand how species richness influences grape must community function.
