Unilateral NMR data of H1311 and TERRADOU tomato drying

This dataset contains Unilateral NMR raw and processed data acquired to construct profiles, i.e., signal intensities as a function of depth, and to measure T2 relaxation times of fresh and two degrees of drying of two cultivars of tomato as investigated in the Experiment B of the research article https://10.1016/j.foodres.2025.116385 .
