This RNA-Seq transcriptomic study aims to investigate the acid resistance mechanisms of acetic acid bacteria under different acidity conditions. Acetobacter pasteurianus CGMCC 1.41 was inoculated in glucose, yeast extract and peptone (GYP) media with 3% ethanol (Treatment Medium I, TM I) or 0.5% acetic acid and 6% ethanol (TM II) to perform the acetic acid fermentation. Each medium for fermentation was sampled at three points, together with a control sample from the culture of GYP medium without adding ethanol or acetic acid (CK). RNA samples were collected when the fermentation in both TM I and TM II entered initial (I-1: acidity of 0.60 g/100mL; II-1: acidity of 0.89 g/100mL), mid (I-2: acidity of 2.29 g/100mL; II-2: acidity of 3.68 g/100mL) and final (I-3: acidity of 3.02 g/100mL; II-3: acidity of 6.03 g/100mL) stages, respectively. The CK sample was collected when the culture reached exponential phase.
