本数据集涵盖了水煮、烤制及生鲜猪肉的瘦切块与整切块中维生素D3(vitamin D₃)和25-羟基维生素D3(25-hydroxyvitamin D₃,25OHD₃)的含量数据,所涉猪肉部位包括肋排、里脊、肩肉、颈肉、腹肉与中心猪排。生鲜猪肉切块的总脂肪含量采用重量法进行测定。采用搭载紫外二极管阵列检测器(UV-DAD)的反相高效液相色谱(reverse phase high performance liquid chromatography)开展定量分析:通过C18固相萃取柱(C18 cartridge)完成蛋白质中脂肪酸的纯化;将纯化后的样品通过极性硅胶柱(polar silica cartridge)实现维生素D3与其代谢产物的分离;再通过两支串联的氨基柱(amino columns)完成糖类杂质的去除。将纯化后的提取物注入C18固相萃取柱(SPE column),即可完成维生素D3与25-羟基维生素D3的定量分析。烤制样品的制备在电热组合烤箱(electric combi oven)中完成。
