This dataset contains the list of metabolites detected in an oat-based beverage (Avena sativa) subjected to thermal treatment and fermentation with Lactobacillus plantarum. The data are provided as an Excel file (FILE S1) including compound identification, retention time, mass-to-charge ratio (m/z), ionization mode, and annotation level. Metabolites were identified using chromatographic and mass spectrometric analyses (UHPLC–QTOF), enabling comparison of compositional changes induced by processing. The dataset supports the evaluation of biochemical transformations associated with thermal processing and microbial fermentation in oat-based beverages.
