Propionibacterium freudenreichii is a member of the dairy propionibacteria and traditionally used as a cheese ripening starter. Recently, Propionibacterium freudenreichii CIRM-BIA 129 alias ITG P20 (CB 129 wild-type) proved to be efficient to protect mice from induced acute colitis according to their probiotic abilities. These probiotic therapeutic effects can be linked to P. freudenreichii beneficial metabolites (short-chain fatty acids, vitamins, and bifidogenic factor). Local action of metabolites and immunomodulatory molecules is favored by the ability of probiotics to adhere to the host cells. S-layer proteins mediate adhesion process and the interruption of the slpB gene in CB 129 wild-type strain resulted in a CB129∆slpB with a drastic reduction in adhesion to HT-29 human intestinal epithelial cells.
