The dataset contains data regarding chicken feather keratin isolate (KI) obtained by reductive extraction with L-cysteine, its enzymatic hydrolysates produced by trypsin (KI-T), chymotrypsin (KI-C), pepsin (KI-P) and subtilisin (KI-S), Maillard reaction products (MRPs) derived from KI-S and glucose (KI-S-G1 to KI-S-G9), MRPs derived from KI-S and xylose (KI-S-X1 to KI-S-X9), and data from simulated gastrointestinal digestion (SGID) of selected samples (KI, KI-S, KI-S-X4). The dataset includes data from high performance size exclusion chromatography (HP-SEC, molecular weight distribution and antiradical activity profiles), data used for determining the degree of glycation (DG) and browning intensity (A294 and A420) of MRPs, free amino acid profiles of the samples post-SGID, data used to calculate total antioxidant activity using ABTS scavenging, Fe2+ chelating and Folin-Ciocâlteu reagent reducing assays, data from cytotoxicity (MTT test in Caco-2 cells), and data from direct and indirect mutagenicity assays (Ames test in Salmonella Typhimurium TA98 and TA 100).
