The aim of the project is to identify selection criteria for lactic acid bacteria strains suitable for use in the production of fruit preparations using fermentation processes. These lactic acid bacteria strains should form and secrete exopolysaccharides (EPS), preferably Beta-glucans, within the fruit component. This will lead to the structural stabilization of the fruit preparation, ensuring the distribution of fruit pieces in the final product. The goal is to reduce or avoid the use of hydrocolloids, achieving homogeneous fruit distribution in clean-label products, especially in organic fruit preparations, while maintaining good processability. For this purpose, over 250 bacterial strains were screened and characterized by the ability to produce exopolysaccharides. During this process, the genome of the bacterial strain Furifurilactobacillus rossiae LTH 5742 was sequenced and published here.
