含有淀粉和糖类的原料均可以酿制出白酒,酿制出的白酒风味也各有不同。各家白酒企业技术条件、酿制水平、技术水平的不同,在白酒生产过程中的甲醇含量往往难以管控,网上常常爆出自酿白酒甲醇超标、细菌超标导致中毒等现象。同时随着监管部门持续加强酒类质量安全监管,指导各地开展酒类专项整治则体现出对行业产品质量的重视。产品质量是关系到白酒企业长期健康发展的根本,也是树立行业标杆的基础。1.数据采集:采集不同的抽样地址、样品和受检单位;2酒精产品安全检测:通过酒精度对各类相关企业进行酒类产品检测以此获得相关数据;3数据处理:筛选出酒精度项目不符合产品明示标准和质量要求没达到产品要求的问题检测结果,用于评估其产品安全性,检出不符合产品安全概率=酒精不符合标准要求次数/进行酒类产品受检总数;4、数据应用: 酒类食品安全评价检测问题项检测结果可以作为食用安全性评价依据,为监管部门靶向监管提供技术支撑。

Raw materials containing starch and sugars can all be used to brew Chinese Baijiu, with the resulting Baijiu exhibiting diverse flavors. Due to differences in technical conditions, brewing capabilities and technological levels among various Baijiu enterprises, it is often difficult to control methanol content during Baijiu production. Incidents of poisoning caused by excessive methanol or bacteria in homemade Baijiu are frequently reported online. Meanwhile, as regulatory authorities continue to strengthen quality and safety supervision of alcoholic beverages and guide local regions to carry out special rectification actions for alcoholic drinks, this reflects the industry's emphasis on product quality. Product quality is the fundamental factor for the long-term and healthy development of Baijiu enterprises, and also the basis for establishing industry benchmarks. 1. Data Collection: Collect various sampling locations, samples and inspected entities. 2. Alcoholic Beverage Safety Testing: Conduct testing on alcoholic beverage products from all relevant enterprises based on alcohol content to obtain relevant datasets. 3. Data Processing: Screen out problematic test results where the alcohol content fails to meet the product's explicitly stated standards and quality requirements, which are used to evaluate product safety. The non-compliance rate for product safety is calculated as: Non-compliance rate = Number of times alcohol content fails to meet standards / Total number of inspected alcoholic beverage samples. 4. Data Application: The test results of problematic items from alcoholic beverage food safety evaluation and testing can serve as a basis for edible safety assessment, providing technical support for targeted supervision by regulatory authorities.
