In this study, the encapsulation of uvaia phenolic extracts in lignin nanoparticles was evaluated using the solvent shifting method. Quercetin was employed as a model molecule to understand the interactions involved in particle formation and encapsulation processes, using techniques such as ¹H NMR, DOSY, FT-IR, XPS, and DFT. Furthermore, the encapsulation efficiency and the release of quercetin in hydrophilic and lipophilic food simulants were also assessed.
