Koumiss Metagenome

The microbiota of Kazakh koumiss is very poorly studied. The contribution of acetic acid bacteria to the functional properties of koumiss has not been characterized. We selected samples of koumiss with varying degrees of antagonism against the opportunistic yeast Candida albicans. Fermented cow's milk and whey, obtained using koumiss as a starter and maintained in the indicated substrates with monthly transfers, have also been studied. The presented data made it possible to characterize the microbiota of koumiss in southeast Kazakhstan and to assess the relationship between individual groups of microorganisms in the context of anti-Candida antagonism.
