牛蛙在养殖过程中,养殖户超范围添加呋喃西林类药物,使用后会在动物源性食品中残留,形成呋喃西林代谢物,并通过食物链传递给人类,长期摄入会引起各种疾病,对人体有致癌、致畸胎等副作用,存在一定的质量及食品安全风险隐患,本数据可以对牛蛙中呋喃西林代谢物残留情况提供参考和技术支撑。1.样品来源:本项目抽检的牛蛙全部来源于浙江省,检测部位是可食用部分。2.数据采集:检测方法、检测结果等信息;3.数据处理:筛选出牛蛙中呋喃西林代谢物含量不合格检测结果(农业农村部公告 第250号《食品动物中禁止使用的药品及其他化合物清单》中规定牛蛙中不得检出),用于评估其食用安全性,牛蛙中呋喃西林类代谢物含量不合格率=检出不合格批次/进行呋喃西林类代谢物含量监测的牛蛙总数;4、数据应用:牛蛙中呋喃西林类代谢物含量不合格率检测结果可以作为食用安全性评价依据,为监管部门靶向监管提供技术支撑。

During bullfrog breeding, some farmers misuse nitrofural drugs beyond the approved scope. After administration, these drugs will leave residues in animal-derived foods, forming nitrofural metabolites, which can be transmitted to humans via the food chain. Long-term intake of such contaminated food may cause various diseases, with side effects including carcinogenicity and teratogenicity, posing potential quality and food safety risks. This dataset can provide references and technical support for the monitoring of nitrofural metabolite residues in bullfrogs. 1. Sample Source: All bullfrog samples tested in this project were sourced from Zhejiang Province, with the edible parts selected for testing. 2. Data Collection: Information including detection methods and test results; 3. Data Processing: Filter out unqualified test results of nitrofural metabolite content in bullfrogs (as stipulated in Announcement No. 250 of the Ministry of Agriculture and Rural Affairs of the People's Republic of China, which prohibits the presence of such drugs and their metabolites in bullfrogs). The unqualified rate of nitrofural metabolite content in bullfrogs is calculated as: number of unqualified detected batches / total number of bullfrogs monitored for nitrofural metabolite content; 4. Data Application: The test results of the unqualified rate of nitrofural metabolite content in bullfrogs can be used as a basis for edible safety evaluation, providing technical support for targeted supervision by regulatory authorities.
