This study focused on three pig breeds: Jinhua pigs (JHP), Lvjiahei pigs (LJH), and DLY pigs. Jinhua pigs, renowned worldwide for their high-quality meat and appealing flavor, represent a highly representative breed of Chinese native pigs. Lvjiahei pigs, a newly bred group, have received accolades in consumer markets for their tender meat, high intramuscular fat content, and delectable flavor. DLY pigs, serving as the control group, also exhibit vastly different flavors from Chinese native pigs., This study aims to explore the molecular mechanisms underlying the formation of characteristic flavor substances in Chinese native pigs and newly bred high-quality pigs by integrating GC-IMS-based volatilomics, LC-MS/MS-based lipidomics, and transcriptomics. This approach provides new clues for constructing a more comprehensive Gene-Lipid-VOCs pathway and offers fresh insights into understanding and improving pork flavor.
