Revalorisation potential of agricultural waste materials into a sustainable source of health-promoting dietary fibre

The aim of this study was to establish the suitability of agricultural side stream materials as a source of dietary fibre. Soluble fibre is largely removed during food production processes and the human microbiota has limited capacity to efficiently break down the residual complex insoluble material in its native state. However, the way the material is processed may impact its fermentability by the gut microbiota. The objective of this project was therefore to assess the gut microbial fermentability of agricultural side stream materials prepared as flours with two different processes to modify their surface structure.
