酸价(以脂肪计)主要反映食品中油脂的酸败程度,食品中酸价超标会产生哈喇味。食用酸价超标的食品,可能引起肠胃不适等症状。本数据主要用于监测永嘉县流通领域植物油酸价指标的情况,通过检测数据,可以判断植物油的酸价是否符合食品安全生产标准,避免因植物油酸价超标导致的食品安全问题,为监管部门提供监管依据,进一步保障消费者的食品安全。1、样品来源:本项目抽检的植物油全部来源于永嘉县流通环节市场主体经营的植物油。 2.数据检测:样品经前处理后,根据GB 5009.229-2016第一法检测原则,利用冷溶剂指示剂滴定法进行测定,得出数据。3、数据判定:酸价的计算,X=(V-V0)×C×56.1/m。X为试样酸价,单位为mg/g;V为试样消耗标准滴定溶液体积,单位为mL;V0为相应的空白消耗标准滴定溶液体积,单位为mL;C为标准滴定溶液的实际浓度,单位为mol/L;m为试样称取质量,单位为g。植物油中酸价标准要求为≤3mg/g 4、数据应用:通过抽检数据分析研判,我们可以判断植物油酸价是否符合食品生产标准,避免因酸价超标而产生的食品安全问题,为监管提供依据。

Acid value (calculated on the fat basis) mainly reflects the degree of rancidity of fats and oils in food. Excessive acid value in food will produce a rancid off-flavor. Consuming foods with excessive acid value may cause symptoms such as gastrointestinal discomfort. This dataset is primarily used to monitor the acid value index of vegetable oils in the circulation sector of Yongjia County. Through the test data, we can determine whether the acid value of vegetable oils meets the food safety production standards, avoid food safety issues caused by excessive acid value of vegetable oils, provide regulatory basis for supervision departments, and further protect consumers' food safety. 1. Sample Source: All vegetable oil samples collected in this sampling project are sourced from business entities operating in the circulation links of Yongjia County. 2. Data Detection: After pre-treatment, the samples were determined using the cold solvent indicator titration method in accordance with the first test method stipulated in GB 5009.229-2016, and the test data were obtained. 3. Data Judgment: The calculation formula for acid value is: X=(V-V0)×C×56.1/m. Where X represents the acid value of the test sample, with the unit of mg/g; V represents the volume of standard titration solution consumed by the test sample, with the unit of mL; V0 represents the volume of standard titration solution consumed by the corresponding blank test, with the unit of mL; C represents the actual concentration of the standard titration solution, with the unit of mol/L; m represents the mass of the weighed test sample, with the unit of g. The standard requirement for acid value in vegetable oils is ≤3 mg/g. 4. Data Application: Through the analysis and evaluation of sampling inspection data, we can determine whether the acid value of vegetable oils meets the food safety production standards, avoid food safety issues caused by excessive acid value, and provide a basis for supervision work.
