This study investigated the microbial composition of samples collected from two virgin coconut oil (VCO) production processes employing the natural fermentation method for VCO production. This was performed via a metagenomics approach to explore the dynamic changes in the microbial community structure as coconut milk pressed from coconut meat passed through fermentation to liberate VCO. Samples were sequenced using the V3-V4 region of the 16s rRNA gene.
