Ferment: An outreach project using Nanopore 16S amplicon sequencing to investigate fermented foods

Nanopore MinIon data from 16S rRNA amplicon sequencing from an outreach project investigating the bacterial communities associated with various fermented foods. Foods included kimchi, lactobacillus fermentations, fish sauce and raw ingredients prior to fermentation.
