Sichuan pickles is rich in lactic acid bacteria which have good antibacterial effect. Therefore, this study evaluated the bacteriostatic ability of 3 strains of lactic acid bacteria isolated from Sichuan pickles against four food-borne pathogens (Staphylococcus aureus, Vibrio parahaemolyticus, Salmonella typhimurium and Salmonella enteritidis).
