The bakery and confectionery retail sector is in the saturation phase of its life cycle. Between 2019 and 2024, industry turnover grew by an average of 0.6% per year, meaning that it is expected to amount to 3.4 billion euros in the current year. While sales generated by conventional products have shrunk, these sales losses have been partially offset by an expansion of the product range to include healthier product alternatives and a variety of snack offerings. Furthermore, the sector landscape has undergone significant structural change in recent years, as the number of companies in the sector has fallen while the number of businesses has risen slightly. Predominantly small artisan bakeries have exited the market, while large companies have continued to expand their branch network.As in previous years, competition from the sale of baked goods and confectionery in food retail is likely to increase in the future. Although the industry is initially recovering somewhat following the drop in sales caused by the coronavirus crisis, IBISWorld is forecasting an average decline in sales of 1.9% per year to €3.1 billion in 2029 for the period from 2024 to 2029. The number of industry players is likely to decline in the coming years.
