This dataset contains LC-MS/MS quantifications of methylamines and pH trajectories from an in vitro high-throughput colon model study investigating the effects of pomegranate polyphenols and metabolites on microbial trimethylamine (TMA) production from L-carnitine. High-throughput in vitro fermentations were conducted using 1% human fecal inoculum, supplemented with 2mM L-carnitine, and incubated under anaerobic conditions (37°C) for 48 hours. Concentrations of L-carnitine, gamma-butyrobetaine, and trimethylamine (TMA) were quantified using LC-MS/MS with isotopically labeled internal standards. This dataset includes the processed data of quantified methylamine concentrations and pH measurements over a time course of 48 hours.
